Award-winning chef, Franck Putelat

Passionate about French products and savoir-faire, Franck Putelat draws his inspiration directly from our regions, which is what makes his famous cuisine so distinctively vibrant. Originally from the Jura region, Franck Putelat began his career in a Michelin 1-star restaurant in the Jura’s famous ski resort  Les Rousses. Recognised for his talent and determination, he has worked with some of the great names in French gastronomy such as Georges Blanc in Bresse and Philippe Legendre in Paris. In 1998 he finally fell for the charms of Carcassonne, remaining in the south of France ever since.

His talent was soon recognised and his restaurant La Barbacane was awarded 1 Michelin star, before he went on to win the Bocuse d’Argent at the world's most prestigious cooking contest in 2003. In 2006, he opened his fine dining restaurant “La Table de Franck Putelat”, for which he was awarded 2 Michelin stars. In 2013, he opened his charming 4 star hotel **** “Le Parc “ close to the Historic Fortified City of Carcassonne. Bolstered by this success and always on the lookout for a new challenge, in 2016 Franck Putelat opened two further establishments in his treasured city, the “Brasserie A 4 Temps” and the 4-star Pont-Levis Hotel.

Franck Putelat extends a unique welcome to you to the historic, bucolic surroundings of this park, right at the gates of the Historic Fortified City of Carcassonne.Representing the fulfilment of a childhood dream, his restaurant was awarded 2 Michelin stars since 2012,  offering creative cuisine full of intensity, combining flavours with flair and a pinch of mischief. Bright and airy and filled with natural light, the restaurant is a tasteful setting in which to enjoy a calm and convivial experience.

As a world-famous chef, Franck Putelat uses locally-sourced produce to create exquisite and poetic menus, putting his own twist on traditional French and Languedoc dishes. He has an ongoing love affair with Carcassonne, the source of his inspiration and home to his many businesses.

In March 2013, Franck Putelat also opened a boutique hotel attached to the restaurant. Comprising seven bedrooms, “Le Parc” hotel is especially designed to extend diners’ pleasure.

Brasserie A 4 Temps

The “Brasserie A 4 Temps” is just 7 minutes from our hotel, offering a new bistronomic experience.

Right on the Porte de Jacobins, the last remaining part of the Bastide Saint‐Louis fortifications, the Brasserie offers refined and creative cuisine in a typical bistro style.

The restaurant relies purely on fresh and local produce to devise a menu which changes with the seasons, each following the same format: 4 tapas-style dishes to share, 4 starters, 4 ‘plats de la mer’, 4 ‘plats de la terre’, 4 desserts or even 4 “essentials”. A selection of wine and other drinks are also available, regularly updated to thoughtfully complement the changing dishes.
